Ingredients
  

  • 8 spring roll wrappers
  • 2 cups shredded cabbage
  • 1 carrot julienned
  • 1/2 cup bean sprouts
  • 1/2 cup sliced mushrooms
  • 2 green onions thinly sliced
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch mixed with 2 tablespoons water as a binder
  • Cooking spray or olive oil spray

Instructions
 

  • In a large bowl, combine the shredded cabbage, julienned carrot, bean sprouts, sliced mushrooms, green onions, minced garlic, soy sauce, sesame oil, and grated ginger. Mix well to combine.
  • Place a spring roll wrapper on a clean surface, with one corner pointing towards you.
  • Spoon about 2-3 tablespoons of the vegetable filling onto the bottom third of the wrapper.
  • Fold the bottom corner over the filling, then fold in the sides, and roll tightly to enclose the filling.
  • Dip your finger into the cornstarch mixture and lightly brush the top corner of the wrapper to seal the spring roll.
  • Repeat with the remaining wrappers and filling.
  • Preheat the air fryer to 370°F (180°C) for 3-5 minutes.
  • Lightly spray the spring rolls with cooking spray or olive oil spray.
  • Place the spring rolls in the air fryer basket or tray in a single layer, making sure they are not touching.
  • Air fry the spring rolls at 370°F (180°C) for 10-12 minutes, flipping halfway through the cooking time, until golden brown and crispy.
